Homemade Camping Food: Infinity Seed Crackers Recipe

Crackers are an ideal camping food. They’re compact, easy to carry, and you can pair them with a wide range of cheeses, spreads, and meats. They’re great sprinkled on top of soups, salads, or tuna. They are the ultimate take-anywhere snack.

My friend Jennifer Snyder showed me how to make this recipe at Round the Bend Farm. They were a huge hit, and I’ve been making them for camping trips ever since.

I call these crackers “Infinity” Seed Crackers because you can use infinite combinations of seeds, fermented vegetables, and fresh herbs.  They’re live-culture, raw, vegan, and delightfully crispy and flavorful.

Infinity Seed Crackers 

Live-culture, raw, vegan. Makes 4-6 servings. 

Ingredients:

¾ cup whole flax seeds

⅓ cup sunflower seeds (or other small seeds)

¼ cup chia seeds

½ cup sesame seeds (or other small seeds)

2-3 tbs pumpkin seeds (or other small seeds)

1 cup sauerkraut or other fermented vegetables

½ cup sauerkraut brine, or other live culture brine

¼ cup chopped white onion

2 garlic cloves, peeled

1 ¼ cup mixed fresh herbs (dill, oregano, cilantro, parsley, sage, thyme, chives, etc)

1 tsp salt

Instructions:

  1. Pulse half the flax seeds in a spice mill until powdered.

  2. Put the powdered flax seeds in a bowl and mix with all the other seeds.

  3. In a food processor, mix the sauerkraut, brine, onion, garlic, herbs, and salt and blend until smooth. 

  4. Mix all the ingredients together. 

  5. Press the mixture in a thin layer (about 1/8 inch thick) on a silicone sheet or wax paper. Score it into cracker shapes with a knife, and put it in a dehydrator. 

  6. Dehydrate at 105 F for about eight hours or until crispy. 

  7. Break the crackers into pieces and store in an airtight container for up to a month.
